
Finally we have some nice spring weather in Salzburg, and I really enjoy every second of it until the exams begin in May. Since I spent a lot of my weekends in Salzburg, I tried out a lot of pancakes recipes during the last few weeks, because I wanted to finally find the perfect one for those big and fluffy pancakes. I mean, is there something better than a freshly baked pancake on a Saturday Morning? After quite some testing, I may have found the one (of course I will test some more!), but it is definitely my favourite recipe, until i found a better one (this can take quite some time!). Due to the fact that they contain greek yoghurt, the consistency of the pancake is so smooth, it is unbelievable. I did not add sugar to the pancake itself, therefore you can eat it either with maple syrup and berries like me, or with cottage cheese and salmon. They are really thick and smooth and very delicious.
Ingredients:
- 85 g flour
- 2 eggs
- 1 tsp. baking powder
- a pinch of salt
- a dash of milk
- 1 tb. coconut oil
In a bowl, mix all the ingredients together until you have a smooth dough. Let the dough stay for at least 5 min., so that the baking powder can activate itself. In a pan, heat the coconut oil until it is melted and hot. Pour in 1/3 of the dough and let it cook until you have some bubbles on top. Make sure to check it from time to time, because the coconut oil can get really hot. When the pancake is cooked, turn it around and let it cook too. Repeat this until you used the complete dough. Staple the pancakes and then drizzle some maple syrup on top and some berries, or every other topping you want to have. Enjoy with some sunshine and a coffee!
