Some years ago I bought a baking tin for donuts, because I thought that this was something I absolutley needed in my life. I thought you could use it for donuts and bagels and all that kind of stuff. Guess what I never used until last weekend.! Yep you heard right. And I have to say I loved it. My baking tin is not that big, so I have like 24 smaller donuts, which is actually really nice because you can share them with many friends.
Since it is December I decided to go for a Christmas theme. Lots of cinnamon, lots of rum, apples and a lot of love. So I decided to make Baked Apple donuts. And here is a little secret: if you don´t like donuts, you can use this batter for pancakes aswell! You´re welcome! I mean just the sound of baked apple pancakes on a crisp winter morning! But without any further rambling, let´s get into the kitchen!
You will Need for 24 small donuts:
- 3 eggs
- 100g sugar
- 250ml milk
- A pinch of salt
- 80ml vegetable oil
- 200g flour
- 2 tsp. baking soda
- 100g grounded almonds
- 1 tbsp cinnamon
- 1 small apple, shredded
- some icing sugar for decorating
1.Preheat your oven to 180C°. In a bowl whisk the eggs and the sugar until it is creamy and fluffy. Then add your milk and the vegetable oil. In a seperate bowl mix together the flour, baking soda, almonds, and cinnamon. Add it to the wet ingredients and mix very well. Lastly add the shredded apple and mix again.
2.Prepare your donut tin with some oil and then fill it with your dough. Bake the donuts for 25-30 minutes. They should be golden on top.
3.Get them out of the tin and sprinkle them with some icing sugar and cinnamon. Enjoy with your friends and family!
