Since the first part of my A-Levels is done and the second one is a month away, I have more time to do some baking and trying out new things in the kitchen. I even thought about doing a week of recipes in the summer, when everything is over. Let me know how you like that! Or maybe I am going to do a week of healthy food and a week of Soul food or something like that. But I will definitely do something, because I really miss bloging a lot. The most posts you read during the last two months, I had to prepare in the Christmas holidays, because I had no time at all. But bare with me when the last part of my A-Levels is done, there are going to be much more fun things on here. I promise! But okay let´s move on to todays post. I have a lovely recipe for you, which will take you no time at all. It is the perfect recipe for These occasions when a friend calls you and says that they come around and say hi, but you don´t have anything at home for a coffee chat.
You will Need:
- 5 eggs, seperated
- 125g flour
- 180g sugar
- 2 tablespoons vanilla sugar
- zest of one lemon
- 250g cream cheese
- 1 pack of cream stabalizer
- 400g cream
- 250g strawberries
Preheat your oven up to 220C° heated air. Prepare a baking tray with some parchment paper. In a mixing bowl, mix together the egg yolk, the zest of the lemon, and 100g sugar untl the mixture is very fluffy and pale. In an other clean bowl beat the egg Whites and 20g sugar until they are stiff. Now put the egg whites on top of the egg yolk mixture and sift the flour on top. Fold everything very carefully until you have a nice mixture. Spread it out on the baking tray and bake for 10 minutes. Meanwhile prepare a clean kitchen towl with some sugar. When the cake comes out of the oven, overturn it onto the kitchen towl and roll everything in, so you have a nice roll. Leave it to cool completley.
For the filling whisk your cream and the cream stabalizer until it is stiff. Then put the cream cheese and the sugar on top. Mix until you have a nice cream. Take your strawberries, wash them and remove the green bits, then slice them into slices. Place your cake in front of you, roll it out and spread the cream on top. Now put the strawberry slices on top and roll it in again. Before serving sprinkle some icing sugar on top, or if you have some leftovers from the cream you can put it on top and decorate with some extra strawberries.
PS: You can put 3 tablespoons of pumpkin seed oil into the egg yolk mixture, than your cake will be slightly green and tastes incredible too. This Looks really nice with some pistachios on top.
