I thought I would share an easy but absolutley delicious recipe with you, which is accidentally my mum´s favourite cake, so that you can surprise your mum with a homemade cake. But this is also a cake, which is perfect for summer evenings with friends. You can use the recipe and switch up the berries or fruits. A combination which is also very delicious is pear and blackberry, or apple and raspberry.
It doesn´t matter if you are a “Chef de Pattiserie” or just somebody who knows how to turn the mixer on, this cake is for everybody. There is nothing you can really do wrong (if you follow the recipe in general :))
You will Need:
- 300g flour
- 250g sugar
- 5 eggs
- 200g butter
- 200ml cream
- a pack of vanilla pudding powder
- 500g rhubarb
- 200g raspberry
Preheat your oven to 190 C°For the dough mix together the flour, 100g sugar, 1 egg, and the butter until you get a crumbly dough.
Peel your rhubarb and cut him into 0.5cm wide pieces. But the pieces into a bowl, add the remaining sugar and a tablespoon of cold water and mix.
Whisk all the remaining ingredients, without the raspberries, together. Prepare a tarte tin with butter. Press the dough into the tin. Put your sugar and rhubarb mix on top and then the cream mixture. Sprinkle your raspberries on top and dough rests you may have. Bake your cake for 30-35 minutes. For an extra dust of “glitter”, sprinkle some icing sugar on top before you serve the cake and earn the applause.
