Coconut Chocolate Eclairs

I love chocolate, I live for coconut and I am the biggest fan of French Pastries so these Eclairs come close to heaven for me. I have to say the were my first ever eclairs (as you may are able to see on the pictures :)). They are not that easy so you may want to have a plan B, if you want to make them for friends or guests. But although they didn`t look that appealing, they tasted delicious.

Ingredients:

makes 12 Eclairs

  • 250 ml water
  • 120g butter
  • 185g flour
  • a pinch of salt
  • 50 g sugar
  • 4 eggs
  • 200g dark chocolate
  • 30g sugar
  • 350ml milk
  • 150ml coconut milk
  • 50g corn flour
  • 200g dark chocolate
  • some grated coconut

 

Preheat your oven to 190C. For the dough put the butter and the water into a pan and stir until the butter is melted. Mix the flour, salt and sugar. When the butter is melted remove the pan from heat and stir in the dry ingredients. Stir until it is a smooth dough and then put it back on heat and stir for another 1-2 minutes. Put the dough into a bowl and leave to cool for 10 minutes. img_8920

In the meantime put the coconut milk,  250 ml milk, sugar and chocolate in a pan and put it on the smallest heat. Stir and keep an eye on it, so the chocolate don´t burn. When the chocolate is melted bring the mixture to boil. Mix the remaining 100 ml of milk with the corn flour and stir it into the boiling mixture. Stir until the mixture has thickened up, then leave it to cool completely.

When the dough has cooled down a little bit, take the kitchen aid or a hand mixer to fold in the four eggs. At the beginning it looks like the dough separates from the eggs, but keep staring until the dough is smooth and shiny.

Fill the dough into a piping bag, take baking tray with parchment paper and pipe six 13 cm long “stripes” on it. Take another baking tray and pipe another six ones. Bake them for 20-25 minutes. Leave them to cool completely.

img_8926You can cut the eclairs in half, completely or you leave a little bit at the end so they are easier to eat or you can make three holes with your piping nozzle in each eclair and fill them. However you decide you have to fill a piping bag with your chocolate cream and fill them as you like. Then you melt the remaining dark chocolate and drizzle it over the eclairs. Decorate with the grated coconut. Enjoy with a cup of nice tea or coffee and some people you love (if they are good :))
