Lemon Drizzle Cake


Every type of Lemon cake is up there at my favourites. I just love the taste together with coffee or with some Earl Grey. So good! This is one of those receipes which is ready in an hour or so, therefore it is just perfect for those moments when your best friend Comes around spontaneos and you want to whip out a delicious piece of cake.Lets start the drizzle!


170g butter, softened

170g sugar

3 eggs

170g flour

1 teaspoon baking powder

zest of 2 lemons

150g icing sugar

Juice of 2 lemons


Preheat the oven to 180C°. Prepare a loaf tin with some butter. Cream together the butter and the sugar, then mix in the eggs one by one. Add the flour, baking powder and the zest and mix well. Pour the mixture in the tin and bake for 30 minutes or until a skewer Comes out clean. Now mix together the Juice and the icing sugar. Make some holes in the warm cake and pour in the juice. Leave the cake to cool down. Before you serve sprinkle some icing sugar on top! Enjoy with a Cup of coffee or tea and a good friend!
