Pecan Cupcakes with Maple frosting

Autumn, Autumn, Autumn I love you so much! Your colours, your flavours, your vibes I just love you so much. All the lovely evenings you can spend with a cup of hot chocolate and a blanket, reading or writing as I do at the moment. I just love the whole feeling. So now I have rumbled enough over my love for Autumn I am going to show you the receipe for a little cupcake which can upgrade your Autumn evenings to a next level.

Ingredients/ Zutaten:

For the cupcakes (makes 12)/ Für die Cupcakes (12 Stück):

-225g sugar/ Zucker

-200g chopped Pecan nuts/ Pecannüsse

-120g butter/ Butter

-2 eggs/Eier

-190g flour/ Mehl

-1 teaspoon baking powder/ TL Backpulver

-70g sour cream/ Sauerrahm

 

For the frosting/ Für das Topping:

-60 g butter, softened/ zimmerware Butter

-90 ml maple syrup/ Ahornsirup

-350g icing sugar/ Puderzucker

-2 tablespoons milk/ Esslöffel Milch

-400g cream cheese, room temperated/ Frischkäse, zimmerwarm

 

Prehat your oven to 180C°. Prepare a 12 muffin tin with muffin cases. First you want to cream together the butter and sugar until they are light and fluffy. Then add the eggs one by one. Mix all the dry ingredients. Add the sour cream to the egg mixture and then add the dry ingredients. Just mix until they are combined. Divide the mixture into your muffin tin and bake for 15-18 min. Get them out the oven and leave them until they are completly cool.

For the frosting cream the butter until it is white, then add the icing sugar and the maple syrup. Combine very well. Lastly add the cream cheese. If the mixture is to stiff add some milk. Spread the frosting on the cool cupacakes and decorate. Enjoy with a cup of tea!

Den Ofen auf 180C° vorheizen. Ein 12er Muffinblech mit Muffinförmchen füllen. Butter und Zucker schaumig schlagen. Die zwei Eier nach und nach unterrühren. Die trockenen Zutaten miteinnander verrühren. Den Sauerrahm zu der Butter-Mischung geben und dann die trockenen Zutaten hinzufügen. Alles vermengen, so dass es gerade verrührt ist. Den Teig auf die Muffinförmchen verteilen und für 15-18 min backen. Die Muffins abkühlen lassen.

Für das Topping die Butter schlagen, bis sie hell, fast weiß ist. Dann den Puderzucker und den Ahornsirup hinzufügen. Zuletzt den Frischkäse hinzufügen. Sollte das Topping zu steif sein einfach ein  bisschen Milch unterrühren. Das Frosting auf den Muffins verteilen und nach Belieben dekorieren. Mit einer tasse Tee genießen!
