RECIPE: Tropical Chia Semolina Pudding


First of all let me say, I am not the biggest fan of heat and summer, I am more of the winter and colder kind of girl. I mean I think it is easier to put clothes on than to reduce clothes, because I can layer up forever, but I will get to the point where I can not remove anything anymore. Easy as that! BUT (and here it comes) I love everything that tastes like Summer and island, especially coconut, mango and passionfruit. And therefore you will find most of the time a little bit of sunshine in my food. As a breakfast-lover I am always on the search for new ideas and recently I have fallen in love with chia pudding and although my family is already sick of it, I love it. It is so easy to make, and you wake up and have a full breakfast. Also I love to make it in a jar, so that I can take it to university and then I am able to get those extra 30 minutes in bed, which is in my opinion a good start to a new day, right?

Let´s make a yummy breakfast: 


  • 3 tbsp chia seeds
  • 80 ml coconut milk
  • half a mango
  • some coconut flakes
  • a passionfruit
  • some maple syrup if you need it
  • a banana
  • 50g semolina
  • 150ml milk


Put the chia seeds and the coconut milk in a jar or bowl, add some maple syrup if you want some sweetness, stir for a while and then leave it in the fridge over night. In the morning, you can leave it like it is and just eat the chia pudding and the fruits, or you heat up the milk until it is simmering, add the semolina and let it boil until you have a thick creamy semolina mush. Then put it into a bowl, add the chia seed pudding, the fruits and the coconut flakes! Enjoy!
