RECIPE: Apple-Custard-Cake with Marzipancrumble


Do you know what really excites me? I can tell you, Autumn is on it´s way! My favourite season. The whole nature changes, all the beautiful colours, more rain, no heat, and my list could go on for hours. One thing that stands for Autumn more than everything are apples and pumpkins in my opinion. I would love to try some things with pumpkins in the nearer future too, but today I just have some apples for you.

Did you ever went into a German bakery? If so, the first thing you will notice are the many things with custard they offer. When I asked my dad what cake he wanted on a Sunday-afternoon he said: “Something with custard”. So I made a typical German Cake with a twist. Trust me the marzipancrumble is the best.

You will Need for one baking tray of cake:


  • 6 EL milk
  • 6 EL vegetable oil
  • 75g sugar
  • 300g flour
  • a pinch of salt
  • one pack of baking soda
  • 150g creme fraiche
  • 1 egg

For the filling:

  • 850ml milk
  • 2 packs of vanilla custard mix
  • 4 EL vanillasugar
  • 1,5kg apples
  • 150ml cream
  • 1 egg

For the marzipancrumble:

  • 300g flour
  • 220g butter
  • 1 egg
  • 100g sugar
  • some drops bitter almond flavour


1. Put the milk in a pot, exept for 7EL. Add the sugar to the milk and bring it to boil. Mix the 7 EL with the custard mix. When the milk is boiling, stir in the custard mix and stir until it thickened up and you have custard. Leave it to cool it a little bit.

2. In a bowl mix together the creme fraiche, oil, milk, egg, sugar and the salt. Mix the flour and the baking soda and then add it to the wet ingredients. Kneat everything until you have a combined dough. Take a baking tray and grease it with some butter. Roll out the dough evenly.

3. Take your apples and wash them carefully, then slice them into thin slices. Preheat your oven to 200 C°.

4. Mix all the ingredients for the crumbles until you have a smooth dough. Then take the egg for the filling, seperate it, and whisk the egg white until it is stiff. Then take the cream and whisk it until it is stiff too. Take your custard and fold in the egg yolk, egg white and cream. Spread the custard on the baking tray, place the apple slices on top and then crumble the dough on top. Bake everything for 25-35 minutes.
