RECIPE: Coconut Rice Pudding with Mango


This dessert  is the embodiment of Summer. There is coconut in it and mango and it tastes like a vacation in Thailand, or on an other wonderful island.

 And the best thing: since it is milk rice it is a nice breakfast too. Especially in Summer this as a breakfast is very pleasant, because you can make this easily the night before and chill it in the fridge, so that you have a cool breakfast.





You will need for 6 portions:

  • 1l milk
  • 400ml coconut milk
  • 240g rounded rice
  • 40g vanilla sugar
  • one vanilla pod
  • one mango

In a big cooking pod mix the milk, coconut milk, the rice, vanilla sugar and vanilla pod and bring everything to boil. Let it simmer for 30 minutes or until the rice is done. You have to stir from time to time, so that the rice don´t burn. After the rice is done, let him cool down completley and then the only thing you have to do is to enjoy. 🙂
