RECIPE: Waffles à la “Papa”

Where my parents come from it is a tradition that you have waffles on the weekend with milk rice, a cherry sauce, cream and topped with cinnamon. Normally you skip one regular meal for this…. When I was a kid the few weekends  my dad made these waffles were definitely a highlight. These stacks of waffles and you were able to put anything on top. I created the Empire State Building on my plate several times, but every time my dad had to finish for me…. he didn’t mind at all. I will share the recipe with you so you can build your own waffles Empire State buildings on your plate ( and let somebody finish them :P)

PS: If you are like my mum you want to put the waffles in the toaster for a minute or two, so that they are extra crunchy!

You will need: (for one family brunch)

-Waffles:

  • 1 pack baking soda
  • 6 eggs
  • 500g flour
  • A pinch of salt
  • 300 ml milk
  • 1 tablespoon corn flour
  • 300g sugar
  • 2 teaspoons cinamon

Preheat your waffle iron. In a bowl beat your eggs until they are fluffy and a little bit thickened. Add the sugar, milk,  and cinnamon. Mix together all your dry ingredients and then add them too. If your mixture is to thick just add a little bit more milk. The consitency should be able to drip from a spoon but not to runny. Pour as much mixture in your waffle iron, as you need to get a nice waffle but not half of the mixture outside your iron (Typical me!… My mum loves it, especially when she cleaned the kitchen three minutes ago. If this is the case, I propose you google the nearest flower market :P… Or mum?).

Nowadays the most waffle Irons have a red and green light which tells you when your waffle is ready to enjoy. If your iron doesn´t have this magic light, normally a waffle takes 2-3 minutes when the iron is hot (with my waffle iron). When your light and fluffy waffle is ready put them on a plate. If you make waffles for a larger group you might want to keep the finished ones in the oven at 40C°, just to keep them warm for everybody. The remaining part is simple, just enjoy them with your favourite topping ( and don´t forget to unplug the waffle iron……typical me too).
